Nantsuttei なんつッ亭 at Orchard Central

Nantsuttei なんつッ亭

It's my first official post on this blog, and I've started it with one my favourite bowls - the Maru-toku Negi Chashu-men at Nantsuttei.

This bowl is nothing like other Tonkotsu ramen - it really screams out pork. The negi helps to balance out the intense creaminess of the soup, and it adds a nice crunch too.

Tender and juicy pork with just the right amount of fat.

Egg had notes of bonito in it, probably bonito stock was used to marinate it instead of the usual shoyu-mirin mix, which also explains the whiter colour as compared to other aji-tamas out there. Tasted a little funky, some people might not like the fishy taste.

Crushed it. Might be too heavy for some so don't just glug it down like other ramen.

Oops, forgot to take a picture of the beer until the last mouthful. It helps to cut the oiliness of the thick soup and introduces new layers of flavours.

A nice bowl to give you that extra boost, but I wouldn't recommend eating it daily.

P.S. I would like to take this chance to thank Brian's Ramen Adventures for giving me the inspiration to start this blog and share my thoughts on ramen in Singapore. He has one of the largest collection of reviews of ramen in Japan (and other countries occasionally). Continue doing what you love man.
